With the 2nd generation of Fermentolevians, you can create your own leaven with its specific flavour profile. This tank will then keep your liquid leaven going day after day. This will enable you to produce a consistent quality of sourdough bread with the same delicate flavour day in day out. Building upon the successful 1st generation Fermetolevian, the tank has been redesigned to improve draining and the controls are now in a user-friendly shape with an intuitive touch screen. A low level probe warns you when the leaven reaches minimum level and an anti-overflow probe warns you if the fermentation risks overflowing. The frame and housing are made of stainless steel with a frontal plastic safety shield protecting the frame from accidental dents. The paddles and scrapers are removable and a cleaning hand spray is now standard on all models apart from the 30-litre model. As an option, you can get an integrated scaling system which gives you real time information about the amount of leaven you have in the tank.
