Dough hydration is the ratio of water to flour. A 60% hydration dough has 60g of water for every 100g of flour. Stiff doughs like bagel dough are often around 50% to 55% hydrated. Ciabatta and some sourdoughs can be 75% to 85% or higher. Make sure the mixer you choose covers the hydration range of your products. 

Some machines in our range handle doughs starting at just 40% hydration, while others are rated for 55% and above.
